Stacks on Stacks – Chewy Granola Cookies
I was searching for an easy and healthy granola cookie recipe and stumbled upon this one in the Walmart ‘Live Better’ magazine. They’re super easy to make and involve simple baking ingredients that you’ll use for future baking recipes. The recipe below is basic, but I have also added other ingredients into the recipe (i.e. raisins/chocolate chips or cranberries/white chocolate) as an additional treat!
1/2 Cup Non-hydrogenated margarine
1/2 Cup Brown Sugar
1/4 Cup White Sugar
1 tsp Vanilla Extract
2/3 Cup All-purpose flour
1/2 tsp Baking Soda
1/2 tsp Salt
1 tsp Ground Cinnamon
2+1/2 Cups Granola
PREHEAT: oven to 350F. Line a baking sheet with parchment paper and set aside.
CREAM: together margarine and suagrs, using an electric mixer, until smooth. Add vanilla and mix for 1 more min.
COMBINE: four, baking soda, salt and cinnamon in a separate small bowl; add to margarine mixture. Mix until combined, then add granola. Stir on low speed until just combined. Place batter in small mounds, 1 tbsp each, onto baking sheet spaced 2 in. apart.
BAKE: for 12 to 14 min. Remove from oven. Let cookies cool on baking sheet for 2 min before transferring to a wire rack to cool completely.
