2 Ingredients for 1 Cookie – [Banana Oatmeal Cookies]

I had a couple ripe bananas left over from the week and was trying to decide what to bake. Instead of baking my regular banana bread or muffins I decided to try making oatmeal cookies with just 2 ingredients – bananas & oatmeal.  I found a recipe online to that showed the ratio I needed of bananas to oatmeal and then I added a couple optional ingredients into the cookies. Keep in mind these are super healthy cookies!   (obviously without all the added chocolate chips haha)   I thought they turned out decent for only really having 2 main ingredients, but I still prefer making banana bread or whole wheat muffins with my ripe bananas :).

2 ripe bananas
1 cup of oats

1/2 tsp of cinnamon (optional)
1/2 tsp of vanilla extract (optional)
sprinkle of chocolate chips (optional)

PREHEAT: oven to 350 degrees

COMBINE: mashed bananas and any other optional wet ingredients (i.e. vanilla extract) together.  Then add the dry ingredients (except for the chocolate chips) together and mix well.  Lastly add in the optional chocolate chips and mix.  Line a cookie sheet with parchment paper (spray a bit in the spots where you place the cookies or else they will stick a bit – just makes it easier to remove after baking) and spoon a tablespoon of the batter onto the lined sheet.

BAKE: for 15 minutes in the oven and then cool before eating.
