SUMMER IS HERE!! With the first 40 degree heat wave warning of this year in Toronto, I decided to try making some homemade DIY popsicles. I wanted to make an ice pop that not only tasted healthy, but was also super fun in design and easy to make. After searching online for various recipes, I landed on one from Martha Stewart that only required 4 ingredients (strawberries, blueberries, plain yogurt, and some sugar). I decided to test out the recipe even though it didn’t have that many written reviews. Common it was Martha Stewart!! I edited the recipe slightly by eliminating the sugar added to the berries, as fruit already has a lot of natural sugar. Also, as I was making the popsicles I realized the recipe required more fruit than mentioned to adequately fill 10 popsicle holders. Overall I was pleasantly surprised how well the popsicles turned out! :) They were extremely refreshing, visually appealing, and super healthy all at the same time! Not to mention easy peasy to assemble. :D
Recipe (10 popsicles)
3/4 lb strawberries
3/4 lb bluberries
1 1/4 cup plain yogurt
2 tablespoon sugar
PUREE: strawberries and transfer to a small bowl. If the strawberries are too dry and not pureeing, just add a tablespoon of water to help. (*Magic Bullet is great for this so you dont have the mess of transferring into a small bowl)

WHISK: together yogurt and sugar in a separate bowl.
COMBINE: 3 mixtures into the popsicle holders, alternating the different mixtures so that you have 3 to 5 layers. To make the swirl effect, take a thin knife and use an up and down motion to swirl the mixtures. Freeze for 3 hours or overnight and enjoy!
*I used frozen blueberries for this recipe. Just make sure you take them out a couple hours before you make the popsicles so that they are dethawed and can be easily pureed.
