Happy Easter! – [Chocolate Egg Cupcake]

This post is extremely delayed, but I wanted to capture this extremely easy recipe I decided to use for my Easter creation!  The chocolate cupcake recipe is basic yet rich at the same time and requires everyday ingredients. To keep with the chocolate cupcake, I decided to go with chocolate butter cream icing from one of my favourite baking books ‘Butter’.  Lastly for the toppings, I went with some chocolate sprinkles to emulate a bird’s nest and some Cadbury mini eggs for visual decoration and Easter cues.  This recipe is easy to put together and super versatile, as you can easily decorate it differently for any occasion!

Recipe (12 cupcakes)

Chocolate Cupcakes
1 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup cocoa powder
1/2 teaspoon espresso powder (optional)
1/2 cup milk
1/4 cup vegetable oil
1 egg
1/2 teaspoon vanilla
1/2 cup boiling water

Chocolate Buttercream Frosting
3/4 cup butter, softened
2 1/4 cups icing sugar
3/4 dark cocoa
3/4 cup chocoalte chips
1/3 cup of whole milk

PREHEAT: oven to 325.

COMBINE: together flour, baking powder, baking soda, salt, sugar, cocoa powder, and espresso powder (optional).

CREAM: together milk, vegetable oil, eggs, vanilla, and flour mixture until well combined.  Add in boiling water and beat on high for about 1 minute.

BAKE: for 15 – 18 minutes and let the cupcakes cool completely before frosting with the chocolate buttercream.

CHOCOLATE BUTTER CREAM: cream butter in a bowl for about 5 minutes until it is smooth and light in colour.  Melt the chocolate chips and set aside to cool.  Mix together icing sugar and dark cocoa in a separate bowl.  Then slowly add in icing sugar mixture into cream butter, 1/2 cup at a time and mix for about 10 seconds each time.  Make sure to scrape down your bowl after every addition.  Then add in melted chocolate and mix until combined.  Lastly add in milk slowly and turn on high for 10 – 12 minutes until the consistency is to your liking.

ASSEMBLE CUPCAKES: pipe the cupcakes once they have cooled down.  Add the chocolate sprinkles on top and then decorate final touches with a couple Cadbury mini eggs!
