For this past long weekend, I wanted to bake something Easter themed and with chocolate mini eggs. I ended up finding this unique recipe online that involved baking a brownie in a pie shell. This time I didn’t edit the recipe and it turned out just great! I would definitely make this recipe again. It was super easy to put together and great for sharing. :) The hardest part of this recipe was actually trying to find the mini eggs! I went to 3 grocery stores and none had any left, so I ended up going to Bulk Barn and picked up some that had almonds inside. DOUBLE YUM!
RECIPE (1 pie)
1 pie crust
3/4 cups chocolate chips
1/3 cup butter
1/2 cup sugar
2 large eggs
1/4 cup flour
1/4 cup cocoa powder
1 pack of mini eggs
PREHEAT: to 350
MELT: chocolate in microwave for 30 seconds, then stir and microwave again until melted. Set aside to cool.
COMBINE: all other ingredients (except mini eggs) until combined. Pour in the melted chocolate and combine until blended.
CRUSH: 3/4 of mini eggs in a plastic bag using a rolling pin. Sprinkle almost all of the crushed mini eggs into the pie shell.
POUR: the brownie mixture on top of the crushed mini eggs in the pie shell.
BAKE: in the oven for 20 minutes, then take out the pie and add remaining whole mini eggs to the top. Place pie back into the oven for 5 minutes. Then remove from the oven and set aside to cool before cutting.
