With the fall weather almost coming to an end, I wanted to bake some comfort muffins and decided to make something I haven’t baked before – Morning Glory muffins! The recipe I tried was highly recommended from my mom and also from my favourite baking book called Butter. The muffins do have raisins, so make sure to warn people before they take a whole muffin! As a lot of people truly hate raisins with a passion. They turned out amazing and were perfect comfort food in this cold weather. Definitely try this recipe, they will no disappoint!! :)
RECIPE (12 muffins)
2 1/2 cups flour
1 3/4 cups sugar
1 tablespoon cinnamon
2 teaspoon baking soda
2 cups grated carrots (about 2-3 large carrots)
1 cup sultana raisins
1 cup unsweetened shredded coconut
1 cup chopped pecans
1 large apple, peeled, cored and grated
4 large eggs
1 cup vegetable oil
1 tablespoon pure vanilla
PREHEAT: to 350
COMBINE: the flour, sugar, cinnamon, baking soda, carrots, raisins, coconut, pecans and apple – mix well.
WHISK: in another bowl the eggs, oil and vanilla
POUR: the liquid ingredients into the dry ingredients and mix until just combined.
SCOOP: batter into the lined muffin tin.
BAKE: in the oven for 35 minutes. Allow muffins to cool slightly in the pan before transferring to a wire rack to cool.
It is a great muffin with a lot of different ingredients.
