Let It Snow – [Crinkle Cookies]

Over the holiday break I wanted to make some holiday themed goodies and settled on baking some chocolate crinkle cookies.  This was my first time making these beautiful cookies.  I did some research online and stumbled upon this recipe that looked pretty easy to make – https://cafedelites.com/fudgy-chocolate-crinkle-cookies/.

Majority of crinkle cookie recipes require you to chill the dough before baking, so make sure you prep these cookies the night before or the morning of so they can chill before baking them.  Additionally you can also roll the dough smaller so that they turn out bite-sized, although a family member of mine managed to eat 3 of these cookies when they came out fresh from the oven!  Other than that this recipe requires very simple ingredients and is super quick to bake. :)

RECIPE (20 small or 10 large cookies)
1/2 cups cocoa powder
1 cup white sugar
1/4 cup vegetable oil
2 large eggs
2 tsp vanilla extract
1 cup flour
1 tsp baking powder
1/2 tsp salt
1/4 cup icing sugar

COMBINE: the cocoa powder, white sugar and vegetable oil. Beat in the eggs – one at a time until fully incorporated then mix in the vanilla extract.

COMBINE: in another bowl the flour, baking powder, and salt.

MIX: the dry ingredients into the wet mixture just until a dough forms – do not over mix.  Cover and put mixture into the refrigerator for 4 hours or overnight.

PREHEAT: to 350 and place parchment paper on baking trays.

ADD: icing sugar into a mixing bowl.

ROLL: chilled dough into balls (1 tablespoon for smaller cookies, or 2 tablespoons for larger cookies) and evenly coat each ball in icing sugar, making sure it is generously coating the chilled dough.

BAKE: in the oven for 10 minutes for smaller cookies and 12 for larger cookies. Let the cookies cool for 5 minutes before removing to wire racks to cool.
